Rodent droppings were found on ingredients used by Irashadur Rahman, 45, while mouldy food which was over a month out of date was found in his kitchen.
His restaurant, the Spice of Bengal, was investigated by environmental health officers after a customer complained about hygiene standards.
Investigators found the 24-seater restaurant in the seaside town of Aberystwyth littered with rat faeces and discovered filthy cloths were being used to wipe cooking surfaces.
Food and packaging had also been gnawed at by rodents and cleaning standards were deemed “very poor.”
A Ceredigion council spokesman said an investigation found “a rodent infestation, poor standards of cleaning and unfit food on the premises.”
He added: “Environmental Health Officers found evidence of rat droppings, and gnawing in the food store and kitchen of the premises, which was open and trading to the public.
“Officers found fresh rodent droppings throughout the food premises, dirty cleaning cloths used on food preparation surfaces, pest infested raw ingredients and mouldy food stored in the fridges, which was up to 37 days beyond its use-by date.
“Officers also found very poor standards of cleaning at the premises.”
Rahman was summoned to Aberystwyth Magistrates’ Court back in 2013 but failed to attend the hearing.
A warrant for his arrest was issued but it took until June this year for police to catch up with him after he wrapped up the business and moved to London, and was eventually arrested at his home in Romford, Essex.
He initially pleaded not guilty to ten hygiene offences, saying he wasn’t in charge at the time, but later changed his pleas to guilty at Aberystwyth Justice Centre.
Rahman was fined £1,000 and ordered to pay £1,515 in costs, and banned from managing or operating a food business.
Ceredigion Councillor Rhodri Evans said: “Cases like this underline the importance of the work of our food and safety team and the value of our inspection programme.”
