Gwynant Jones, aged 26, was at the Academy pub in Great Darkgate Street, Aberystwyth, on Saturday at 11.25pm when the attack took place.
Mr Jones, from Machynlleth, Powys, is now facing reconstructive surgery to repair the damage to his ear.

Speaking to Welsh language TV news programme Newyddion 9, the computer programmer said he did not know his attacker.

He said he felt a sudden pain and only realised the severity of the wound when his hand came away from his ear covered in blood.
He is now being treated by specialists at Morriston Hospital in Swansea.
Police have said the suspect is around 20-years-old, and was wearing a fancy dress outfit of an orange poncho and a black wig.

It is thought he was with a group of women, one of whom was wearing a white dress, while another was in a nurse's uniform and a mask. A third woman in the group was wearing a black dress, according to police.
Anyone who may have witnessed the incident has been asked to call Aberystwyth CID on 101.
