Mr Jones has been told by doctors the missing part of his ear was so badly damaged it couldn't be reattached.
The mobile app designer told how he the incident happened at around 11:25pm on Saturday, October 31.
Staff at the Academy pub took Mr Jones to a back room following the incident.
It was only after he felt a sudden pain and put his hand to the left side of his bloodied head that he realised a large part of his ear was missing.
He was taken by ambulance to Morriston Hospital in Swansea but doctors told him the missing chunk of his ear could not be sewn back on.
Police said a 24-year-old man had been arrested on suspicion of causing grevious bodily harm in and had been bailed pending further police enquiries.
